The human race has a love/hate relationship with coconut, doesn’t it? You either love it or you hate it. I’m a lover. Coconut is wonderful, and it’s especially wonderful when it’s used in a sweet dessert like this easy cake mix cake.
I love this recipe because it’s so versatile as far as flavor profiles. You can fill it with so many different fruit fillings — think of the possibilities! Lemon curd, pineapple filling, mango filling, passion fruit filling, lime curd, raspberry filling — and on and on. The cake is moist and flavorful and comes together in a jiffy. If you have a food processor, consider giving your shredded coconut a few whirrs with the chopping blade to make the pieces less stringy. It will make the cake smoother and more attractive when it’s being eaten (nobody likes to see stringy things hanging off a fork).

Taking just a minute to cost this recipe out with my CakeBoss Software, I arrived at a cost of $4.75. Assuming an 8″ round double-layer cake serves at least 15, that makes this cake crazy economical at just $0.32 per serving.
