Easy CakeBoss Coconut Cake with Cake Mix
Moist, easy, fast coconut cake that works with so many fruit fillings.

Ingredients

box
white cake mix
We like Pillsbury or Betty Crocker
1
box
instant coconut pudding
small (3.4 oz)
4
eggs
1⅓
cups
water
½
cup
vegetable oil
1
cup
sweetened, shredded coconut
Instructions
Preheat oven to 325 F.
Grease and flour two 8" round pans.
Optional - in your food processor, whirr the coconut a few time so that the pieces are smaller and not quite so stringy.
Combine all ingredients in large mixing bowl.
Mix or stir for 1-2 minutes until well combined.
Pour into prepared pans and bake for 30-40 minutes, or until toothpick inserted in center comes out clean.
Let cool completely on wire racks.
Assemble with desired filling and frost with CakeBoss Buttercream or your favorite frosting.
(optional) Before frosting crusts, pat outside with shredded coconut (toast if you want to give it a little crunch and color).
Notes
If you don't have or can't find coconut pudding mix, use a box of vanilla or french vanilla pudding + 1 tsp coconut extract.
