Come and Bake It
Two recipe e-books you’ll use over and over again.
Have you ever wondered how to know if a frosting requires refrigeration? Cottage food producers generally must sell only foods that do not require refrigeration, otherwise known at NTCS (Not Time and Temperature Controlled for Safety). But with frostings and fillings, that can be impossible to know without an expensive lab test.
Lab-tested recipes. Delicious results.
Every recipe has been tested by an accredited laboratory for pH and water activity. I show you the test results for every recipe, regardless of whether the recipe is Time and Temperature Control for Safety (TTCS) or Not Time and Temperature Control For Safety (NTCS). There is absolutely value in knowing if a recipe is TCS, even if your cottage food law doesn’t allow it to be sold.

A few things to know...
Most states require their cottage food producers to sell only foods that do not require refrigeration. While the books were developed for Texas cottage food producers, Texas (and most other states) use standards promulgated by the FDA, so the test results in the books can be applied in most states.
